In 2008 the census reported that 11.9% of all Americans claimed Irish ancestory in this country. That's a large percentage. The Irish are famous for their fighting spirit, and their drinking abilities. But what I want to draw attention to here is the culture they brought to our country and the many good things that come from being just a bit Irish.
So enjoy these Irish blessings, sayins, and toasts, as they are heartwarming.

I have known many, liked not a few, loved only one, I drink to you.

As you slide down the banisters of life may the splinters never point the wrong way.
Now for an Irish coffee recipe:
17 ounces of coffee
1 ounce of whiskey
Brown sugar to taste (at least a tablespoon)
Heavy cream (whipped, add a teaspoon of white sugar for extra sweetness)
Chocolate (your choice of any chocolate crumpled in the cup)
Brew coffee as desired, whip the cream so it doesn't run off the spoon
Heat your cup with hot steamy water
Add sugar to your cup, about a tablespoon of brown sugar will do
Stir in the whiskey
Stir to combine all ingredients
You can add a favorite chocolate, like Andes or toffee crumpled into coffee
Top with a heavy cream whipped to perfection.

A tad of history:
In the mid 1500's Grace O'Malley inherited her father's ship and became known as one of the most notorious pirates of her day with 200 crew members she looted other ships off the coast of West Ireland. Arrested by the British, she obtained a full pardon on the promise to help guard against the Spanish Armada.
